Vinification

The grapes are manually harvested and macerated on their skins until the must takes on a rose color. Once the residue has been removed at 46.4ºF, the clean must is fermented (92.8ºF). The wine is then fined with natural clay and undergoes tartaric stabilization at 24.8ºF, followed by final micro-filtration.

Tasting Notes

Cabernet Sauvignon is carefully cultivated until the grapes are fully ripened. Its powerful and remarkably fruity bouquet carries scents of bilberries, strawberries and pepper. Fully body and perfect acidity gives this wine a lively, supple character and notably long finish.

Serving Suggestions

Served between 50-55ºF, the Enate Rosado pairs favorably with pasta dishes, poultry in currant sauces, soufflés, etc. The wine will maintain its fruity quality throughout its first year, developing more complex aromas with minimal aging.
