Vinification

The grapes are hand-picked, destemmed and crushed. The must is fermented at 82°F in stainless steel tanks. Maceration takes place for 28 days and malolactic fermentation occurs in new French barrels. The wine remains in 225 liter casks for fourteen months.

Tasting Notes

Complex, spicy and intense nose which remains eucalyptus, cacao, strawberry jam and smoky notes from French oak. The palate shows firm tannins.

Serving Suggestions

Served at 60-65ºF, it enhances many game dishes,smoked foods and casseroles. This wine may show a sediment of tartrates which is completely natural.
